Matcha comes from Japan and now it is produced in many other places, including China. It is simply powdered green tea made from the leaves of a tea plant. Thanks to the characteristic production process, Matcha gains a beautiful, intense green color and a specific, unique aroma.

Production of Matcha tea starts 2-3 weeks before harvest, then the green tea plants are sheltered from the sun using bamboo mats. As a result, the growth process is slowed down, the leaves take on a brighter more vivid shade of green and begin to produce amino acids. During this process, Matcha green tea becomes sweeter and more aromatic than traditional types of green tea. After the leaves are collected, the leaves are dried and then ground to a very fine powder with stone or granite burrs.

Preparing Matcha

1 small flat teaspoon of tea (about 2.5 g) pour 250 ml of hot, but not boiling water (about 70-80C), mix with quick movements until the powder dissolves and appears foam.

To prepare matcha in the traditional way, use a bamboo spoon to put a portion of tea into a pre-heated bowl, pour hot, but not boiling water, and then whisk with a special bamboo brush called CHASEN.
