Assam teas are not known for their delicate, balanced floral or citrus notes such as green tea, so for the most part the infusion maintains a crisp, strong character with woody caramel notes. The differences in the taste of the tea depend on whether the Assam tea has larger leaves, young leaves with golden tips, or harvested as part of a much desired second flush.
